Guacamole

Ingredients:

  • 1/2 White Onion, brunoised cut and brine in water with salt for 10 minutes
  • 1 Roma tomato, Seeded and small diced
  • 1 Jalapeño, seeded and finely diced
  • 2 Tbsp Cilantro, Chopped Fine
  • 2 large Avocado, ripe mashed with fork
  • 2 Tbsp. Sour Cream (optional)
  • 1/2 tsp. Cumin
  • 1/2 tsp. Oregano, crushed
  • 1 Lime, to taste and enough to keep the color
  • Tabasco, to taste optional
  • Salt and Pepper, to taste

Directions:

  1. Prepare all ingridients as directed.
  2. Combine all ingredients in a molcajete, or bowl. Season to taste.
