Salsa Criolla (Creole Salsa)

Every Peruvian table has a bowl of Salsa Criolla waiting. It is the bright, sharp, acid-and-heat punch that cuts through rich meats like empanadas and stews, bringing the entire plate to life in seconds.

I. Ingredients

The Soaking Secret

Never skip the cold iced salt-water bath! It draws out the harsh sulfur compounds that cause bitterness, leaving behind purely sweet, ultra-crisp onion ribbons.

II. Method
  1. 1Slice the Onions: Cut the red onions in half lengthwise, and slice them into thin, even half-moons (julienne).
  2. 2The Cold Water Bath: Submerge the sliced onions in salted cold iced water for 10–15 minutes. This tames the aggressive raw bite while keeping them crisp. Drain and shake the excess water out.
  3. 3Dress and Rest: Transfer the onions to a bowl. Toss immediately with freshly squeezed lime juice, your choice of minced aji or chili, salt, and pepper. Let it rest for 5 minutes so the flavors marry.
  4. 4Finish: Fold in the freshly chopped cilantro just before serving. Keep it chill during holding time.

Chef's Variations & Substitutions

The Tomatoes: Want to stretch it or make it more substantial? Add firm plum tomatoes cut into thin wedges.

Choosing Your Heat: Traditional Aji Limo rules Lima, while Aji Charapita reigns in the jungle. Cooking stateside? Fresh red jalapeños, cayenne peppers, habanero, or a pinch of crushed red pepper flakes work wonderfully.

Acid Substitutions: Out of limes? American lemons with a splash of red wine vinegar make a great substitute. Otherwise, match your vinegar to your protein: red wine vinegar for red meats, white vinegar for general use and white meats, and apple cider vinegar for pork.
